Ingredients

  • 3 lbs beef chuck roast, cut into 1-inch cubes
  • 1/2 cup salted butter, melted
  • 6 cloves garlic , minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon sal t
  • 1/2 teaspoon ground black pepper
  • 1/2 cup beef broth
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Place the cubed beef chuck roast into the bottom of the slow cooker insert in an even layer.
  • In a medium mixing bowl, whisk together the melted salted butter, minced garlic, dried oregano, dried thyme, salt, black pepper, and beef broth.
  • Pour the garlic butter mixture over the beef cubes and toss with a spoon to ensure all pieces are thoroughly coated.
  • Cover the slow cooker with its lid and cook on High for 4 hours or Low for 7 to 8 hours until the beef is fork-tender.
  • Turn off the heat, stir the beef to incorporate the juices, and garnish with fresh chopped parsley before serving.
