Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all -purpose flour
  • 3/4 cup finely chopped pecans
  • 1/4 teaspoon sal t
  • 1 cup additional powdered sugar for coating

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • Cream together softened butter, 1/2 cup powdered sugar, and vanilla extract in a large bowl until smooth.
  • Gradually mix in flour, chopped pecans, and salt until a cohesive dough forms.
  • Shape the dough into 1-inch balls and place them 1 inch apart on an ungreased baking sheet.
  • Bake for 10 to 12 minutes until set but not browned.
  • Remove cookies from the oven and immediately roll the warm cookies in the additional powdered sugar.
  • Place the cookies on a wire rack to cool completely.
  • Once fully cooled, roll the cookies in powdered sugar a second time for a thick white coating.
