  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon red pepper flakes
  • 1 clove garlic , minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 cup fresh cilantro, chopped
  • 2 scallions , thinly sliced

Instructions

  • In a large mixing bowl, combine the grated carrots, chopped cilantro, and sliced scallions.
  • In a separate small bowl, whisk together the olive oil, lemon juice, minced garlic, red pepper flakes, ground cumin, and salt until emulsified.
