Strawberry Oatmeal Crumble Bars

Ingredients

  • 1.5 cups old -fashioned rolled oats
  • 1.25 cups all -purpose flour
  • 0.75 cup light brown sugar, packed
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon sal t
  • 0.75 cup unsalted butter, melted
  • 2 cups fresh strawberries, hulled and diced
  • 1 tablespoon granulated sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarc h

Instructions

  • Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper or grease with butter.
  • In a large mixing bowl, combine the rolled oats, all-purpose flour, light brown sugar, baking soda, and salt.
  • Pour the melted butter over the dry ingredients and stir until a crumbly dough forms.
  • Press approximately two-thirds of the oat mixture firmly into the bottom of the prepared baking pan to form an even base.
  • In a medium bowl, toss the diced strawberries with granulated sugar, lemon juice, and cornstarch until evenly coated.
  • Distribute the strawberry mixture in a single layer over the pressed oat base.
  • Crumble the remaining oat mixture evenly over the strawberry layer.
  • Bake in the preheated oven for 35 to 40 minutes, or until the top is golden brown and the fruit is bubbling.
  • Remove from the oven and allow to cool completely in the pan on a wire rack before slicing into 12 bars.
