Sugar-Free Gummy Bears

Ingredients

  • 1/2 cup cold water
  • 0.3 oz sugar -free flavored gelatin mix
  • 0.5 oz unflavored gelatin (2 packets)
  • 1/8 tsp citric acid (optional)

Instructions

  • Combine cold water and both types of gelatin in a small saucepan and whisk until no dry lumps remain.
  • Allow the mixture to bloom at room temperature for 10 minutes to ensure proper hydration of the gelatin granules.
  • Heat the saucepan over low heat, stirring constantly with a spatula, until the mixture is fully liquefied and clear. Do not allow the liquid to boil.
  • Remove from heat and allow the mixture to rest for 2 to 3 minutes, then skim any foam off the surface with a spoon.
  • Transfer the liquid into silicone gummy bear molds using a glass dropper or pipette.
  • Refrigerate the molds for a minimum of 3 hours until the gelatin has completely set.
  • De-mold the gummy bears by gently pulling them away from the edges of the silicone and store in an airtight container.
