  • 1/4 teaspoon garlic powder

Instructions

  • Preheat your oven to 425°F (220°C) and line a large baking sheet with high-quality parchment paper.
  • Place the cottage cheese and eggs into a high-speed blender or food processor and blend until the mixture is completely liquid and smooth.
  • Add the mozzarella cheese, Parmesan cheese, all-purpose flour, baking powder, garlic powder, Italian seasoning, and salt to the blender.
  • Pulse the blender 5 to 7 times until the dry ingredients are just incorporated into a thick, uniform batter; do not over-mix.
  • Pour the batter onto the center of the parchment-lined sheet and use an offset spatula to spread it into an even 10-12 inch circle, roughly 1/4 inch thick.
  • Bake the crust in the center rack for 18 to 20 minutes until the edges are deep golden brown and the surface is firm to the touch.
  • Remove from the oven, add your preferred pizza sauce and toppings, and return to the oven for an additional 8 to 10 minutes until the cheese is melted and bubbly.
  • Allow the pizza to rest for 3 to 5 minutes on the baking sheet before slicing to allow the protein structure to fully set.
