Ingredients

  • 1 cup low -fat cottage cheese
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon extra virgin olive oil
  • 1/2 cup cucumber , sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup raw almonds
  • 6 whole -grain crackers

Instructions

  • Place the cottage cheese into a food processor or high-speed blender.
  • Process for 60 to 90 seconds until the texture is completely smooth and aerated.
  • Transfer the whipped cottage cheese into the main compartment of a divided meal prep container.
  • Drizzle the olive oil over the cheese and sprinkle with black pepper.
  • Arrange the sliced cucumbers and cherry tomatoes in a secondary compartment.
  • Place the almonds and crackers in the remaining sections to maintain crispness.
  • Seal the container and refrigerate until ready to consume.
