Zucchini Garlic Bites

Ingredients

  • 2 cups zucchini , grated and squeezed dry
  • 1 large egg , lightly beaten
  • 1/2 cup breadcrumb s
  • 1/2 cup Parmesan cheese, finely grated
  • 2 cloves garlic , minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat.
  • Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze aggressively to remove as much liquid as possible.
  • In a large mixing bowl, combine the squeezed zucchini, beaten egg, breadcrumbs, Parmesan, garlic, parsley, salt, and pepper.
  • Mix the ingredients thoroughly until a uniform, moldable consistency is achieved.
  • Scoop approximately 1 tablespoon of the mixture per bite and roll into small spheres or uniform cylinders.
  • Arrange the bites on the prepared baking sheet, leaving 1 inch of space between each.
  • Bake for 10 minutes, then rotate or flip each bite and bake for an additional 8 to 10 minutes until the exterior is golden brown and firm.
  • Remove from the oven and let rest for 2 minutes before serving.
