Ingredients

  • 500 g chicken breast, cubed into 1-inch pieces
  • 250 g cottage cheese
  • 120 ml marinara sauce
  • 30 g grated Parmesan cheese
  • 60 g shredded mozzarella cheese
  • 5 ml olive oil
  • 5 g garlic powder
  • 2 g dried oregano
  • 3 g sea salt
  • 1 g black pepper

Instructions

  • Preheat oven to 200°C (400°F).
  • Season chicken cubes with olive oil, salt, pepper, and garlic powder.
  • Roast chicken on a parchment-lined tray for 15-18 minutes until fully cooked.
  • Combine cottage cheese and marinara sauce in a blender; process until the texture is smooth and aerated.
  • Warm the sauce mixture in a small skillet over medium-low heat, incorporating the oregano.
  • Divide chicken into bowls and coat thoroughly with the warm cottage cheese sauce.
  • Top with mozzarella and Parmesan, then broil for 2 minutes until the cheese is bubbly and golden.
