Ingredients

  • 400 g lean ground beef (93/7)
  • 400 g Russet potatoes, cut into matchsticks
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 2 cups shredded iceberg lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion , finely diced
  • 1/4 cup dill pickles, sliced
  • 1/4 cup plain non-fat Greek yogurt
  • 1 tbsp yellow mustard
  • 1 tbsp sugar -free ketchup
  • 1 tbsp sweet pickle relish
  • 30 g shredded low-fat cheddar cheese

Instructions

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Toss sliced potatoes with olive oil, salt, garlic powder, and smoked paprika. Spread in a single layer and bake for 25-30 minutes, flipping halfway through, until crispy.
  • In a large skillet over medium-high heat, brown the ground beef until fully cooked, breaking it into small crumbles. Drain any excess fat and season with black pepper.
  • Prepare the high-protein sauce by whisking together the Greek yogurt, mustard, ketchup, and relish in a small bowl until smooth.
  • Assemble the bowls by placing a bed of shredded lettuce at the bottom of two large bowls.
  • Divide the crispy fries and cooked ground beef evenly between the bowls.
  • Top with tomatoes, red onions, and sliced pickles.
  • Garnish with shredded cheddar cheese and drizzle the yogurt-based burger sauce over the top.
